亦稱作三筋肉 (upper Blade/ ミスジ) 是其他牛肉稱作牛板腱的部位，位於肩胛骨𥚃側，是臂肉中少有活動量較平均、油花平均，肉質甜美。三筋肉特點是正中央的肉筋，表面油花如葉脈一般密佈，肌理細緻，又被稱為「幻之肉」。
